This is probably one of the simplest recipes, which is great when you need to make a quick dessert for a big group.  I tried this at my sister in-laws my first time and had to get the recipe.  My husband and mostly everyone likes this recipe with walnuts, but I for some reason like it without walnuts, So have the time I bake it with walnuts and the other half I bake it without walnuts so I can enjoy it.  So you can choose which ever way you would like.  It is great because it is from egg whites so it is super light and you don’t have to feel bad after eating a whole bunch because they are so delicious.  It is almost like an angel cake but a lot more simple.  My Kids are big fans of this cake as well even though it is not all colorful, how kids like desserts to be.

 

 

Ingredients you will need…

  • 2 cups egg whites
  • 2 cups sugar
  • 2 cups flour
  • 2-3 cups fresh or frozen berries (blueberries, raspberries, strawberry, cherry, blackberry)
  • 1-2 cups walnuts

1.)  Preheat oven to 250 degrees.

2.)  Add egg whites to a bowl with a whisk attachment, and beat on medium-high for 3-5 minutes.

3.)  Add sugar to egg whites and beat for another 2-3 minutes till light and fluffy.

4.)  Remove the bowl, add flour and mix in with paddle, or with hands, until fully incorporated, so there are no bubbles with flour.

5.)  Add in your berry of choice, and walnuts. Mix with hands.  

6.)  Spray baking pan and pour batter into baking pan, mine was 11″x15″ but the 13″x9″ pan works too. Spread evenly.

7.)  Insert cake into oven and bake for 1 hour.  

8.)  After 1 hour of baking, turn on the broil on high for about 5 minutes just to brown the top. Please keep and eye and don’t forget because it will burn….I have done that many time.

9.)  Remove from oven once the color is to your liking. Cut into to squares and enjoy.
