This is a great little appetizer, first off it is super easy, and second it looks great, it defiantly catches your eye.  I made this just recently on my daughters birthday and it really looked great on the table, and everyone was asking about it.  But the most important part was that they almost all got eaten, which should mean something.  When you are buying the cucumber make sure they are not too big, the skinnier they are the better, because if you can get it to be bite size they are easier to eat.  This is also a great dish if you need to bring something where you are a guest to.

 

Ingredients you will need…

  • 3-4 cucumbers
  • 8 oz. cream cheese
  • 3 tablespoons mayonnaise
  • 1 packet ranch mix
  • 1 garlic clove
  • 1-2 tomatoes
  • pinch of salt
  • pinch of pepper

1.)  Partially peel the cucumbers, cut off the ends, then slice into 2 inch pieces and scoop out the seeds half way, so it is like a little bowl.  Set aside.

2.)  Place room temperature cream cheese in a bowl along with mayonnaise, 1 packet ranch mix, salt and pepper, and garlic through a garlic press.

3.)  Mix together with hand mixer until evenly mixed.

4.)  Place cream cheese mixture into pastry bag with star tip (if you don’t have pastry bag you can just use a spoon).

5.)  Pipe cream cheese mixture into the cucumber bowls.

6.)  Cut tomatoes into small bit size pieces and place on top of cream cheese mixture.

7.)  Serve as an appetizer or on the side, either way it is a delicious and simply treat.
