This recipe is a meal that I grew up with, and now I am sharing with my family and children.  This is a meal that we would prepare for family gatherings, or holidays, it is very popular, and the best part is, that it’s super easy.  This recipe goes great with many different sides.  My most popular side dish for chicken schnitzel is mashed potatoes.  Another is potato salad, egg salad.  After I made this recipe, even my 18 month old who does not have all of her teeth yet ate almost a full piece of chicken!  When you separate the flour, eggs and breadcrumbs, an easy tip for a quicker clean up is to use paper plates, then when you are finished you just throw the plate away.  Being a mother of four I always look for little shortcuts like that.  I really hope you give this Czech recipe a try, and enjoy.

 

Ingredients you will need…

  • 5 chicken breasts
  • 1 cup flour
  • 2 cups Italian bread crumbs
  • 2 eggs
  • 3 tablespoons milk
  • salt
  • pepper
  • oil for frying

1.)  Pour oil into sauté pan, about 1/2 inch deep, and turn on to medium heat.

2.)  Slice the chicken in half, to make two thin pieces from each chicken breast.

3.)  Salt and pepper both sides of each chicken.

4.)  Take out three separate plates or bowls, and place flour on one, eggs with milk in another, and bread crumbs in the third plate.  With a fork whisk the eggs and milk.  Now you are ready to start dredging your chicken.

5.)  Take one piece of chicken and cover in flour on both sides.

6.)  Next move onto to the eggs and dip the chicken in the egg mixture until fully covered.

7.)  Last, cover the chicken in bread crumbs, so it is fully covered.  Then place finished chicken on a clean plate.

8.)  Repeat with other chicken slices.

9.)  You oil should be heated by now, add the chicken one by one and fry on each side for about 5-6 minutes and the breadcrumbs have turned a golden brown.  Make sure to keep the heat at medium, because if on high the bread crumbs will get dark but the chicken will not cook enough.

10.)  Remove from heat, and place on a plate with a paper towel.

11.)  Pair it with a yummy side dish or eat by itself with some salty pickles.
