This recipe is a huge hit in my family, and super great when you have leftover mashed potatoes and don’t know what to do with them.  This recipe actually works best if the potatoes are cold, but you can still make  them with fresh mashed potatoes, just make sure the potatoes are completely cooled, because they will hold together better.  My family are my food testers and this one was defiantly approved by everyone, the entire batch was gone as I was frying them, because when they are hot they are the best since they are super crispy.  Even kids who aren’t big fans of mashed potato will love this.  I think it is the addition of the cheese that really makes it a different dish from regular mashed potato. When you bite into it you have the same thing like when you bite into pizza and there is a string of cheese attached to the pancake, it is really great.

 

Ingredients you will need…

  • 4 cups mashed potatoes
  • 3 eggs
  • 3/4 cups flour
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • salt
  • pepper
  • oil for frying

1.)  Heat about 1/2 inch of oil in large nonstick skillet and turn heat to medium-high.

2.)  Measure out 4 cups mashed potato and place in large bowl, then add 3 eggs, salt and pepper if needed, and mix with hand mixer until combined.

3.)  Add flour, garlic powder, and mix again until combined.

4.)  Last add in the shredded mozzarella and mix again, so it is combined evenly.

5.)  Once the oil is heated take 1/4 cup of potato mixture and place into hot oil and flatten with the bottom of measuring cup

6.)  Cook for about 3-4 minutes per side, until golden brown and deliciously crispy.

7.)  Remove from oil, and place on a large plate with paper towel.

8.)  And now the best part is left, to give it a try! enjoy.
