If you need a cake to catch people attention this will defiantly get that done with the mosaic of strawberries on top or the three different layers, each with its own great flavor, but even better together.  This cake is great because it can be prepared ahead of time, which is always helpful if you have other things to do before your event.  When I made this, my guests were defiantly saying ooooh, aaaaahhh, and couldn’t wait to give it a try.  But most importantly the taste is great, I mean come on, you can’t go wrong with strawberries and chocolate.  It wasn’t too sweet that you need to wash it down with every bite, but sweet enough to enjoy.  Which I really hope you enjoy as well.

 

Ingredients you will need…

Brownie Layer

  • 1 box of brownie mix (I used duncen Hines)
  • 2eggs
  • 1/4 cup water
  • 1/2 cup oil

Strawberry gelee layer

  • 1/2 cup water
  • 3 teaspoons unflavored gelatin
  • 3-4 cups halved strawberries
  • 2/3 cups sugar
  • 1 squeeze of lemon juice

Strawberry mousse layer

  • 2/3 cups strawberry puree
  • 1 cup white chocolate
  • 8 oz. cream cheese
  • 8 oz. whipped topping
  • 16 oz. strawberries for decorating

Brownie layer

1.)  Start with the brownie layer, and prepare as instructed on box. Cook the brownie in a spring form pan, so the sides are removable. I used Duncan Hines brownie mix. Cook and let cool completely.

Strawberry gelee layer

1.)  Start by adding the unflavored gelatin to the 1/2 cup of water and set aside.  

2.)  Place the strawberries and sugar into a saucepan on medium-high heat, and let it comes to a boil, then let that cook for about 5 minutes so there is a lot of juice.

3.)  Remove strawberries from heat, and puree them. Take out 2/3 cup of the puree and set aside. Add the gelatin mixture to the strawberries and mix, then add a squeeze of lemon juice, mix until fully combined. Then set strawberry gelee aside to cool.

Strawberry mousse layer

1.)  Combine the white chocolate and reserved 2/3 cup of strawberry puree in a small saucepan, on medium, low heat, just until the chocolate has melted, then take off the heat and let cool.

2.)  Next, in a medium size bowl add the cream cheese, and beat with a mixer until light and fluffy.

3.)  Add the white chocolate mix to the cream cheese with a mixer until fully incorporated.

4.)  Make sure the white chocolate is fully cooled before adding in the whipped cream, otherwise the cream with melt. Once cooled add in the whipped cream and fold into mousse until fully incorporated.

Assembling the cake

1.)  Take the fully cooled brownie layer and place the strawberry mousse on top, spread evenly, then place in refrigerator for about 20-30 minutes. While that is in the fridge cut and prepare the fresh cut strawberry for decorating.

2.)  After 20-30 minutes remove the cake from refrigerator, and arrange your cut strawberries on top of the mousse.

3.)  Once it is to your liking take the gelee and slowly pour if over the mousse and strawberries, make sure it is evenly spread, then place in the refrigerator for 2-4 hours, until the gelee has set and doesn’t move.

4.)  Once it ready, remove from refrigerator, and enjoy this beautiful and delicious cake.
