Here is a great Russian classic, and one of my kids favorite.  I love to make these when they come from school because they are quick and I know the kids will eat them without any question…..or whining!  It is a great alternative when you don’t have buttermilk, to use sour cream.  Because I always have sour cream in my fridge, but not always buttermilk.  There are so many different ways you can eat oladiki, they can be savory and sweet.  My kids like to eat them with a berry syrup or maple syrup.

 

Ingredients you will need…

  • 2 large eggs
  • 4 tablespoons sugar
  • 1 cup sour cream
  • 1 cup milk
  • 2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • butter or oil for frying

1.)  Place the eggs and sugar in a medium/large mixing bowl, and with a hand mixer, beat together until eggs are light and fluffy.

2.)  Next add in the milk and sour cream, mix with hand mixer until fully combined.

3.)  In a small bowl combine the flour, salt and baking powder and give that a quick mix. Then add that flour mixture to you batter until fully incorporated and you have no clumps of flour.

4.)  On a large non stick pan place about a half tablespoon of butter, or oil and turn heat to medium. Once the butter has melted take a 1/4 dry measuring cup to use as your batter pourer, and pour the batter into the heated pan to the size you would prefer. Cook on each side for about 4 minutes till golden and the edges are a nice dark brown.

5.)  Once the other side is golden brown to perfection, remove from pan and they are ready to serve, or better yet enjoy for yourself.
