I love this meal it is super easy, and so full of flavor, and the gooey cheese brings it all together greatly.  I made this chicken with mashed potatoes and it was great, but I know there are so many side dishes that will work great here.  I think it is also great on its own!  I would suggest eating this straight out of the oven, since the cheese will stiffen after a while.  I baked my chicken for 40 minutes and it was done perfectly, but if your chicken breast is on the smaller side check earlier, because your chicken will dry out, and vise versa, if your chicken breast is on the larger side, you may need to bake it a little longer.

 

 

Ingredients you will need…

  • 4 large chicken breasts
  • 1 cup fresh spinach
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded parmesan
  • 1 jar roasted red peppers or about 1 cup
  • salt
  • pepper
  • Italian seasoning
  • 2 tablespoons vegetable oil

1.)  Preheat oven to 400 degrees.  Prepare baking dish with oil and set aside.  Take one chicken breast and slice it through the middle and open it up like a butterfly. Repeat for remaining chicken breasts.

2.)  Sprinkle with salt, pepper, and Italian seasoning, inside and outside of chicken.

3.)  Open each chicken breast and evenly place the spinach on one half of each chicken.  Next place the roasted red pepper on top of the spinach, and last place the cheese on top of the peppers.

4.)  Fold the other half of the chicken over your filling, repeat with other chicken breast.  Place in prepared baking dish.

5.)  Place the baking dish into your preheated oven for 40 minutes.

6.)  Check chicken for doneness, then remove from oven, and they are ready to be enjoyed.  They are best hot when the cheese is still bubbly.
