If you are looking to change up your meal from the regular mashed potatoes, this is the way to go!  It goes great with just about anything, I like to use it with steak, since it is cauliflower it is not as heavy as potatoes.  The crispy garlic is a great addition, so it is not too cauliflowery…(for my husband).  I always try to trick him with healthy alternatives, since he is not a fan of plain vegetables.  This is also very quick to make like 15-20 minutes all together which is always helpful.

 

Ingredients you will need…

  • 1 large cauliflower head
  • 2 tablespoons olive oil
  • 3 garlic cloves
  • 1/2 cup shredded parmesan
  • 2 tablespoons cream cheese
  • 1/4-1/2 cup warm milk
  • salt
  • pepper

1.)  Bring a pot of water to a boil, meanwhile cut the florets off the cauliflower, and once water is boiling place cauliflower to boil for 10 minutes until a fork goes through the cauliflower and slides off.

2.)  While the cauliflower is cooking in a small sauté pan, cook the garlic (through a garlic press) in olive oil, until lightly browned take off heat and set aside.

3.)  Drain the cauliflower and place half into a food processor and blend, then add the other half and blend again until very fine.

4.)  Add in the olive oil and garlic, and pulse food processer a few times.

5.)  Place the shredded parmesan, cream cheese, warm milk, and salt and pepper.  Blend for about 1-2 minutes.  Taste for salt and pepper and it is ready to serve.  It is best when hot.
