This is a super delicious salad, and is worth the extra work.  There are a lot of different veggies in it, which are super healthy, and the beets change the color of the other veggies which makes it look nice.  This is great to make for a party and it can be prepared ahead of time.  I make this salad on a regular basis, I love that it has a crunch from the onion, and the cooked veggies are soft.  The sauerkraut gives a nice sour taste and the peas are sweet, there is a great balance in this salad of all the right flavors.  Another great part about this salad is that if you have a cool shaped bowl, you can put the salad in the bowl  and flip it out onto a plate to dress up this dish with an interesting shape!

 

Ingredients you will need…

  • 3 medium beets
  • 3-4 medium potatoes
  • 3-4 medium carrots
  • 1 large onion
  • 2 cups sauerkraut
  • 1 can sweet peas
  • 1 can red kidney beans
  • 3-4 tablespoons vinegar
  • salt
  • pepper
  • olive oil if needed

1.)  Boil the beets, potatoes, and carrots in a pot of water, you can boil them together in one pot or separately.  If boiling together, check them separately because the beets will take longer, and just remove the veggies that are done and let the others keep boiling.

2.)  Once all the veggies have cooked set aside and let cool, meanwhile dice the onion and place into a large bowl, open the peas, kidney beans, and sauerkraut, and add to the same bowl.

3.)  Once the beets, potatoes, and carrots have cooled, peel, and dice them into little cubes, all the same size, and add them to the bowl with other veggies.

4.)  Add the vinegar, salt and pepper to taste, then mix together with a large spoon until fully combined.  If you find it to be a little dry you can add a couple of tablespoons of olive oil.

5.)  Once fully combined place into serving dish and enjoy!
