I love these cookies they are great in so many ways! They look great for a party, the kids love them, they are a mix between a meringue and a marshmallow.  But best of all they taste great!  You can make them big or small, but the baking time will be different.  You just need to make sure that the cookies lift from the parchment paper with out sticking, if it comes off clean them they are done.  I love to make these when you need something quick and looks great.

 

Ingredients you will need…

  • 3 room temperature egg whites
  • 1/4 teaspoon cream of tarter
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 teaspoon strawberry extract
  • 5 tablespoons strawberry jello powder
  • 2 drops red food color

1.)  Preheat oven to 250 degrees, and line two baking sheets with parchment paper. The prepare your piping bag with star shaped tip. I used ateco 828.

2.)  Take your room temperature egg whites and place them in a bowl with whisk attachment. Beat egg whites on medium high speed for about 3-4 minutes until foamy.

3.)  Add in the cream of tarter and salt, and beat for another 2-3 minutes until medium peaks form.

4.)  Slowly pour in the sugar, and continue whisking until stiff peaks form, about another 5 minutes

5.)  Then add in the jello powder, strawberry extract, and food coloring, Beat for an additional 2 minutes until fully combined.

6.)  Place meringue into prepared piping bag, and pipe medium sized cookies onto the baking sheet with parchment paper. Once you have pipes out all the cookies, place into preheated oven on the middle rack.

7.)  Bake for 30-35 minutes depending on size, to check for doneness, try lifting the cookie off the baking sheet, if it comes off without sticking, it is done. If it sticks to the parchment paper leave it for a few more minutes.
