This is an awesome, healthy breakfast, and I think my new favorite way to eat avocados.  All you really need is some salt and pepper.  You can choose the doneness of your egg by taking it out sooner, or leaving it in the oven longer.  Top it with what every you like to eat with you avocados.  Bread is a great thing to pair this meal with, and it really is a meal.  Plus a healthy way to start your day, which is always great.  I really hope you give it a try because I am sure you will get hooked like it have.

 

Ingredients you will need…

  • 1 avocado
  • 2 eggs
  • salt
  • pepper
  • cheese for topping (optional)
  • scallions for topping (optional)

1.)  Preheat oven to 425 degrees. Cut the avocado in half, and remove the seed.

2.)  Remove about 1-2 tablespoons of the avocado, depending on your egg size.

3.)  Crack the egg into the hole in your avocado, place in baking pan.

4.) Season with salt and pepper, and place on the middle rack in the oven. Depending on how you like your egg, bake it from 17- 25 minutes. 25 minutes and the egg will be fully cooked through and not runny. 17 minutes and the egg white will be cooked but yolk will be runny. So keep an eye on your egg during this time.

5.)  Remove avocados from oven, once the egg is done to your liking. You can top it with a little cheese and scallions, or eat it how it is, you can’t go wrong with this delicious, healthy breakfast! Enjoy.
